Ingredients: 2 l cold water, 1 kg peeled potatoes, 1 small bunch soup-greens, 3 bouillon cubes, 1 teaspoon peeled ginger, rosemary, 200 ml cream, 2 yolks, 50 g butter, bacon crackling, lemon zest
In a saucepan cover potatoes, soup-greens, bouillon cubes, ginger and rosemary with water and bring to a boil. When potatoes are tender, pour the soup from one pan into another, add diced potatoes, cool down. Add cream, yolks, butter, blend, bring to boil, add salt and pepper to taste. Garnish with lemon zest and crackling.
